EPDM replaced with bitumen, now we have water in the ceiling. Help!

Insurance paid to have the roof replaced. The new roof leaked 3 times immediately after the installation and after attempts to seal the seams better, it was discovered that the flashing around a vent was not done properly. Fast forward to new year's eve. It had just snowed an inch or so and we have beads of water outlining a sheet of drywall in the family room. Roofing company comes out, tarps the roof over that area and pulls my ceiling down to discover a couple of areas that have enough water to start dripping to the floor. Over this past weekend, we now have drywall seams showing and actual cracks in the ceiling throughout the house. Roofing company is saying it is condensation that is causing this and not their problem. They came yesterday and removed their tarp and won't answer any questions when I call. My question is why, if they are right about condensation, did my roof just decide to do this after all these years? Note: it goes drywall, 6 inch rafter with insulation, plywood, then whatever makes up the roof on top. Does this new bitumen roof need different insulation or need to be vented differently from when I had the EPDM roof? I'm trying to find where something was missed.
